Francisco’s text is about the natural and gastronomic richness of Portugal as a country that is under the influence of three different climates: Atlantic, Mediterranean, and Continental. It describes the landscapes, the agricultural products and practices, and the fishing and cattle breeding of the various regions of Portugal, giving special attention to the south region of Algarve. Francisco’s text describes the irony of seeing a crude and handcrafted agriculture, whose products and practices survived from centuries of political negligence, being celebrated by gastronomy.

The text was written in 2008 as a strategic document for the Portuguese Ministry of Economy and Innovation. It was never published.
