Yael Schneiderman's
                                            Butternut Squash



                                            Casserole









        NUMBER OF SERVINGS: 8    PREP TIME: 10 minutes    COOK TIME: 50 minutes


        INGREDIENTS:
        20 oz bag of frozen squash + water from the bag
        1/2 cup melted butter or earth balance (butter flavor) if vegan
        1/3 cup sugar
        1 cup all purpose flour
        3 eggs, beaten
        Cinnamon


        DIRECTIONS:
        Preheat oven to 350° F.


        Defrost and mash squash. Combine with everything else on the list, except for the cinnamon.
        If the mixture is a little dry, add 1 tbsp of water or a touch of dairy-free milk. Pour into a
        greased 8x8 dish, and sprinkle with cinnamon.


        Bake for 50 minutes, until golden brown on top.
