Roasted Brussel
Sprouts
NUMBER OF SERVINGS: 6–8 PREP TIME: 10 minutes COOK TIME: 35 minutes
INGREDIENTS:
1 1/2 lbs Brussels sprouts, trimmed and halved
1 lb red seedless grapes
3 tbsp olive oil
2 cloves garlic, sliced
1 tbsp fresh thyme leaves
Kosher salt and black pepper
DIRECTIONS:
Heat oven to 375° F. On a large rimmed baking sheet, toss the Brussels sprouts and grapes
with the oil, garlic, thyme, 1/2 tsp salt and 1/4 tsp pepper. Turn the sprouts cut-side down and
roast until golden brown and tender, 20-25 minutes. The red grapes and the green sprouts
make for an appealing presentation. And surprisingly delicious!
