SERVES: 8 PREP TIME: 10 min COOK TIME: 50 min

        INGREDIENTS: DIRECTIONS:

1 loaf of day-old bread Preheat your oven to 350°F (175°C). Spread the bread
(about 12 cups), cut into cubes on baking sheets and leave them out overnight to
1-inch cubes stale. You can also toast them in the preheated oven for
about 10-15 minutes, until they are dry but not browned.
        1/2 cup (1 stick) unsalted
butter In a large skillet, melt the butter over medium heat.
Add the chopped onions, celery, and garlic. Sauté until
1 large onion, finely the vegetables are soft and the onions are translucent,
chopped about 5-7 minutes. Stir in the sage, thyme, and rosemary.
Cook for another 2-3 minutes to let the flavors meld.
2-3 celery stalks, finely Season with salt and pepper to taste.
              chopped
In a large mixing bowl, combine the sautéed vegetable
2-3 cloves garlic, minced mixture with the bread cubes. Toss until the bread is
evenly coated. Slowly pour the broth over the bread
2 tsp dried sage (or 2 tbsp mixture, stirring gently to ensure even absorption. Add
fresh sage, chopped) just enough broth to moisten the bread without making
it soggy. Gradually add the beaten eggs, mixing well to
2 tsp dried thyme (or 2 coat all the ingredients. This will help bind the stuffing
tbsp fresh, chopped) together. If you're including any optional ingredients add
them now and gently fold them into the mixture.
2 tsp dried rosemary (or 2
tbsp fresh, chopped) Transfer the mixture to a greased baking dish. Cover
with aluminum foil and bake in the preheated oven for
Salt and pepper to taste about 30-40 minutes, until heated through. If you like a
crispy top, remove the foil in the last 10-15 minutes of
